I'm only mostly sure about this, but a backhand stroke is used when the ball is on the opposite side of your paddle/racquet. Because to get to the ball on time, rather than moving your entire body so that the ball is on the same side as your paddle/racquet, just backhanding it would be quicker and more efficient.
